Amazing Salad

Awesome Salad

Like my free tupperware?

I just fixed myself a really amazing salad. Oooh, its so delicious. Its a pre-packaged deal, Dole’s Classic Iceberg salad. I added tomato and onion to it. I also added some French dressing (shut up, I have to have dressing). Its sooo good. I think I could eat this for breakfast, lunch and supper (thats dinner for ya’ll that call it dinner).

I know that may seem like an odd way to introduce myself, but, that salad, SOOO good. I’m so tempted to go and fix myself another one, BUT, I know, I know, John would tell me about portion control! :)
Why did I want to start this blog? I am overweight, really, truly, overweight. I weigh almost 400 pounds. I went to the doctor a couple of weeks ago when I was sick and I weighed 386 pounds. I’ve always weighed a lot, a lot of it is contributed to me having a bad thyroid, which I am now back on my thyroid medication, so hopefully, that will help me on this weight loss journey.

I’d also like to be able to buy clothes at normal stores. I have to go all the way to Knoxville to the Big & Tall Casual Male store just to buy clothes for myself and their not cheap! $50 for a pair of pants is RIDICULOUS if you ask me! I hope I can buy clothes at department stores again, soon!

I’d also like to lose weight so that I won’t have such a hard life. I’m 20 years old, soon to be 21. I don’t want to be 30 and fat. Everyone that I know that is over 30 and is overweight has always told me to lose the weight before I get old and have an even harder time losing it.

I will be updating you on a regular basis, and if I don’t, you can feel free to hound me. At the moment, the only way for me to update you on my progress is with a measuring tape. There aren’t many scales out there that can weigh people of my size and I don’t want to go to the truck stop to be weighed!

Measuring Tape

Ok, I took a break for a moment to take pictures of the measuring tape. Well, bad news, it wouldn’t go all the way around me. BUT, we’ll know I’m losing weight once it starts to wrap around me!

Hopefully, with this blog, I’ll be forced to exercise more, eat right and hopefully, lose some weight. Thats what I’m hoping anyways!

LOL! I’m not even for sure if its reduced fat or not. But, I didn’t buy it, so I won’t complain, I just won’t use as much! As John says, its all about “portion control.”

A really good salad dressing is any vinagrettes…at least in moderation. All you need is some balsamic vinegar, some quality olive oil. They say use 1 part vinegar for 3 parts oil, but I like mine a little tart (for a tart) so I put more vinegar in. Then some Splenda, garlic powder, salt, pepper. Put it in a shaker container thingy and give it a good shake (I think it loses like 5 calories or something). And voila! But I would taste it to adjust. I like mine very garlick-y and vinegar-y so I would put in a little more if it suits you.

Goes great with fresh baked bread and a tomato and mozarella salad.

I’d have to use real sugar. Splenda & other artificial sweeteners do bad things to me.

I don’t know how raw sugar would taste with it. Maybe try it?

I’m sure it would be fine! lol
